Hi beth~

I have my KT in quart size wide mouth mason jars with a coffee filter

rubber banded to the neck. My tea is great! I had to play around with a

brew time, longer than 5 days tends to make a sour batch, but then

again I live in Central FL. We've only had a few cold days this winter.

What I do is take the scooby and a cup of the last KT and transfer them

into another jar. I boil water, scald the inside of the mason jar,

rinsing it out in the process. I use 3 tea bags of organic black tea

and 1/3 cup of organic white sugar. When the tea cools down ( I make

sure to room temp) I put the old KT and scooby back in the jar. After

the brew time (5-7 days) I transfer the finished KT to a jar with a

tight fitting lid. I have found that the FUSE drink jars have a

wonderful sealing lid on them and they are the perfect size for me and

my counter space! I leave them on my counter ( I have 2-3)instead of

putting them in the fridge. I let the KT breathe once a day by

releasing the lid because it makes a wonderful fizz during the 2nd

ferment and I have heard about bottles exploding.
