" Hi Gayle, My scoby was mailed in a baggie with some starter, so I used that. I think it was probably about 1 cup, but I didn't measure it. I'm relieved to know that it's okay for my scoby to be in the position it's in. Do you test your pH after 7 days? Or, do you rely on taste? So ever since I have relied on my good old taste buds. Besides, I prefer a VERY tart,some would say vinegary, brew. I add a touch of juice concentrate for a bit of sweetness at the time I decant into a glass from my continuous brew container. Nor do I worry about fizziness...which I adore...I gave up on that when i gave up on secondary fermentation. Now I just top off my glass with a splash of seltzer, which is soooo much more reliable and never ever explodes!
