He discusses the various diets, their rationales, pros and cons. About being casein-free he says there may problems from the exclusion of lactose and its breakdown product galactose which is important for various metabolic processes and particularly phenol degredation. Apparently there is no other dietary source of galactose so he suggests supplementing it. At the time of publication the only enzyme product containing galactose is EnZymAid made by Kirkman.
