Guest guest Posted February 4, 2008 Report Share Posted February 4, 2008 I have seen some posts on brewing and so forth. I think at first there were a lot of confusions for me. Once again I can't help but put my 2 cents worth in. I have brewed about 4 batches not so I am F A R from bieng an expert. I do however remember a lot of my biology and advanced biology (been a long time tho) With , my first batch, I boiled the loose tea in a big stainless kettle 10 minutes or more, let it set, strained it thru coffee filters added the sugar... anyway, I really want/ed to do this but I don't want that to occupy my every waking moments. I also do milk and water kefir. We have a coffee maker with the water holding tank. So there is hot water ready at all times (also recovers quick). The coffee maker has never, yes never had any water run thru it except r.o. . So I brew 10 cups of my wonderful turkish black tea at a time put it in my gallon jug(s) 3 of them so far, add my sugar and cool the jug down in the sink full of cool water. Elapsed time 20 min. Plenty of time to read all the great Kombucha emails here while all 3 tea gallons are cooling down. Then the panty hose strainer trick some wonderful person suggested is FANTASTIC!!!!! It preserves almost all the fizz and still removes some of the ooglies.LOL I was using coffee filters. That was taking almost an hour in itself! And 10's of coffee filters. It also takes nearly all the fizz out. Now if someone can just help me slow my wife down drinking this stuff. She LOVES it! NOTE: I am deffinately feeling much better and I swear... the gray in my hair and beard are turning back to black! I was, almost completely white. My wife even noticed and said something about it. Just keep reminding yourself that the Bible says, gray hair is a sign of wisdom! Hang in there. Folks on the Kefir grp have said the same thing about gray hair changing color!!! With this lyme disease + 3 co-infections, I have had 5 incredibly wonderful days after a terrible relapse on Christmas Eve....I'm hoping it's the KT and the Chinese Herbs I'm taking for the lyme. I'm only drinking my 2nd batch, I've stopped herxing...I think it's giving me energy now. I really believe our health lies in these lacto-fermented foods. They are wonderful miracle foods. " Can't you just picture this with a SCOBY grown in one of those 2.8 gallon jars??
