Those metals are mercury, gold, palladium, nickel, cadmium and titanium and the sources are dental metals,cigarette smoking, foods and environment.** ** Thus, the reason for the rise of gluten intolecance and coeliaci might be pollution of the seeds used for the production of the gluten-containing foods with metals. Prof Jan Olaf Gebbers from Basel found the titanium inclusions in the inflamed gastric mucosa. One could see if the memory cells to titanium could be found in patients with titanium deposited at the place of inflammation.**Titanium dioxide, a transitional metal and pigment (E 171) is added to wheat flour for whitening effects.** Why will gluten accumulate metals? Because it contains SH groups. The theory is not new but has not been explored yet.** **In south Sweden, seeds for wheat production contain so high amounts of cadmium which makes is practically unedible. The praxis is to mixe the adultered seeds with non adultered ones from other regions). Cigarette smoking in homes brings daily exposure to Cd, Ni, Ti, etc. So the occurrence of celiac disease could be one of the markers of metal-driven inflammation which could explain that such patients do often have other co-morbidities, such as cardiovascular disorders, neurologic diseses and parodontal disease.** ** **Last but not least, thank you for your efforts regarding discovery of hidden sources of mercury in corn syrup! It is a direct demonstration of the fact above. I find it fascinating... the interesting one for me is the mercury dusting of potatoes.. not mentioned here... but in our area the farmers have special ventialted cabs to protect them when they are planting the crops.... and we as consumers have a free dose of mercury with every bite of non organic tatoes too.

 

So looks like Organic is the safer option all round... once again.
