Everyone here contributes to making this a fabulous group, one that offers so much to each participant, but I wanted to single out Kit because I find his support invaluable. On a personal level Kit, thanks for turning me onto more fruit in my diet. When I used to read that you ate cottage cheese and an orange and you called this "a meal", I used to think, "That's not even a starter!" But now I have discovered the delight of adding chopped green melon to cottge cheese. It's so yummy that I told my hubby it almost tastes like ice-cream. And he said, "Yeah, like when you're in dark cellar and you close your eyes and you think you're on a Carribbean island". OK, so SOME people have no imagination ;-). In my younger years, I couldn't get over the lumpy look of it. That sounds so silly now that I love it! I can't believe I went 40 years never taking a bite because of the way it looks. Still haven't gotten around to trying yoghurt and cottage cheese mixed (even sounds gross!). Do you use flavored yoghurt? I should try it, after all, once you've gotten used to cottage cheese in your mouth, anything goes. Well maybe not anything.... Leaner. Also try it with non-fat fruit flavored yogurt which sweetens it up quite a bit. Add it to pancake batter and it gives a cheese blintz type effect. I went for years (decades) without touching the stuff. It was way down the list and never made the shopping cart. It is now a staple.
