Guest guest Posted September 30, 2007 Report Share Posted September 30, 2007 Hi All! I am in day 3 of my first batch of KT. Thank you for the SCOBY and the recipe Zoe! It has started to form a few bubbles and the SCOBY rose to the top, and it smells great. It has been a little cold here at night so last night I turned the oven on for a second and stuck my brew (1 gallon iced tea jar) in there with the door closed and today the weather is heating up again (92 degrees on the weather bug pop-up), so it should be OK today. We are on a well for our water supply. Zoe told me not to use well water and I also read it on the Happy Herbalists website. I am curious as to where one would get fresh spring water? The mountains once a week? Or bottled? Where do y'all get your fresh spring water? And I'm just curious, why is well water not good for brewing? Thanks!
