Guest guest Posted August 24, 2007 Report Share Posted August 24, 2007 Boy, this KT brewing has been interesting to say the least. My first start with a one gallon jar seems to be doing fine. First brew great, second seems to be doing fine. Now, the continuous brew pot has caused me much concern. First, I got fruit fly larvae. Solved by using napkins instead of cloth that came with it. Next, it brewed too fast becoming vinegar and I was challenged to bring it back ito balance by drawing off and adding my sweet brew. It was ready the very next day with good taste and fizz. Then I added more sweet brew and wanted to try to go at least two days instead drawing off after one. The first day it was good and I wondered if it would be too sour the next day (today) but, lo and behold! Today it seems...flat!! Now, I guess I could try bottling and leaving it out but, really folks, I just want to bottle, stick in frig and drink every day. Does anyone know why one day it's good with some fizz and the next it's flat? I'm drawing off today and adding more sweet brew but, will wait to see if anyone suggests a change in procedure. Sure seems the traditional way is working fine but, I wanted the benefits of the continuous. Like I said.interesting.
