This sounds like something Nicolas will actually eat...Mexican and Italian foods are his faves, and so far we're having no luck with GF pasta. He knows before he even tastes the pasta that it's just " not right " . Must be the smell. I know he'll get used to it, but in the meantime we're trying as many variations on the Mexican theme as we can. I keep thinking about JJ losing weight -- Nicolas doesn't have much to spare ( 7 years old and 49 lbs.). At least he can still eat his favorite snacks -- pudding and popcorn. And lately he's been passing up GF pasta foods in favor of...fruit! Yippee! Thanks again, Carole and Nicolas 6 days GF and counting... Then I read that quinoa is a bit controversial...but I really hope it's okay, because it's my first pasta success. I actually undercooked it at first, so I threw some sauce on it and put it in the microwave and it was fine. Taco casserole tomorrow night-- I'll let you know how it goes. We use----I'll look the name up later for you. But it is potato and rice---a few more calories than just rice. We gave JJ sausage and bacon to eat, great to carry around the house. About that pasta--it takes a while to figure how to get it so it isn't mush. I cook until almost done then shut the gas off--it finishes cooking in the hot water, just check it every minute or 2. & Garry, parents of (11 ds), (10 ds), JJ (8 ds/autism/celiac), (7 ds/ADHD/Celiac), and Esther (5 ds).
