goat ghee or goat cream?

Hi everyone,

I managed to make cow butter ghee recently. I was very pleased with myself but

actually it's easy - just warm up unsalted butter and gently and scoop off the

solids. I ran it through a cotton cloth also. But we felt it didn't suit

us/Eddie - but then we don't usually use any cow milk.

But I don't know where to get unsalted goat butter. I did try making ghee with

our usual salted goat butter but it didn't work (guessing the salt affects the

melting temperature). Anyway, it seemed overdone and it didn't set.

I know I can get nice raw butter from red23 - but it seems a shame and a bit

expensive too to then heat it to make ghee.

Also I'm wondering if it is possible to make or get goat cream?? Something like

stiff double cream. I'm thinking ahead for winter puddings :-)

Thanks for any ideas,

Sandyxx
