So keep an eye on it.She has interviewed others including The Happy Herbalist.A few facts I have gleened about GT is that the long brewing period is because of the large volume (imagine the flying saucer scobies he creates!). He uses evaporated cane sugar.Here is the site kombuchakamp.blogspot.com Also, I have been investigating if the chinese use kombucha and are as crazy about it as us. I read that the mom passses it down to the daughter.I know that koreans are also very knowledgable about fermenting so I asked The Korean what he has heard(being the only asian I could think of), I am waiting for his reply. Can't even compare to the store bought stuff and if it's now being watered down, I wouldn't spend the money for it.
