This site is going to interview GT in the future and ask about the

lactic acid issue. So keep an eye on it.She has interviewed others

including The Happy Herbalist.A few facts I have gleened about GT is

that the long brewing period is because of the large volume (imagine

the flying saucer scobies he creates!). He uses evaporated cane

Also, I have been investigating if the chinese use kombucha and are as

crazy about it as us. I read that the mom passses it down to the

daughter.I know that koreans are also very knowledgable about

fermenting so I asked The Korean what he has heard(being the only asian

I could think of), I am waiting for his reply. Are there any Chinese

that know if kombucha is widely used in China?I am very curious since

it came from there.

I tried only the GT Dave's brand before it got pulled from the

shelves, then I was forced to make my own and I have to say that home

made is the best!

Can't even compare to the store bought stuff and if it's now being

watered down, I wouldn't spend the money for it. JMHO.
