If no one comes along to take it, I recommend that you keep at least one extra Kombucha Colony and some finished Kombucha tea as a backup in case there is ever any problem with your main brew. Many people keep what they call a SCOBY Hotel for that purpose. A separate jar which they keep at room temperature into which go all the extra Kombucha Colonies. Keep them all covered with finished Kombucha tea and they will turn it to vinegar which can be used as starter for your next brew or to start new brews or to give away. Many of us like to keep several Kombucha Colonies (SCOBY) in our brewing jar as well as that speeds up the fermentation time a bit, keeps the carbonation in the tea, and seems to benefit the taste as well. Because i have MS i have had to use plastic containers because they are lighter than glass and i must say i have found plastic very successful for brewing ( i was a bit dubious at first lol). I must say a big thankyou to margaret for starting me off on my Kefir and Kombucha making. She has been an invaluable source of advice. Absolutely love this forum and enjoy reading all your posts.
