If you want to keep all your SCOBYs in your brewing containers...that is just fine. Many folks keep their extras in " SCOBY hotels " ...containers they reserve just to put their spares in. Other people give them away to new brewers or brewers who want to try another 'strain'.... You might want to consider making SCOBY cream from them or using one occaisionally as a washcloth in the shower. Many of us toss them into the compost or into our gardens or flower beds....they are high in nitrogen... As long as your brewing containers have enough room for the SCOBYs and enough brew for you , you are doing fine. Enjoy! Nothing wrong with what you are doing, except that that much scoby lessens the amount of brew you can have in the jar. I tend to do the same thing. Periodically I will go in and cut the scoby into 2 or more pieces, keep one and put the rest in " hotels " or feed to my compost or direct to the garden. When you use a hotel, when do you take them out of the hotel and use them again? Do you just cycle them around? I am going to look into making some cream, I assume Dom has a recipe! If anyone in the South would like some Scoby, I would be happy to try and mail them to you after this brew if finished.
