Guest guest Posted October 19, 2007 Report Share Posted October 19, 2007 Hi there, I'm five days into my first *ever* batch of KT, and I had a question: I have a nice SCOBY forming on top, but much of it is being lifted from the surface by big pockets of air trapped beneath the surface. Should I poke them back down to touch the liquid? How strictly should I follow the " leave it alone! " directive? I'm looking forward to consuming a great brew, and I don't want to mess anything up! You don't have to poke the bubbles down...unless the newly forming SCOBY is actually climbing out of the brew jar! The air bubbles indicate that things are really happening in there! On the other hand it really won't hurt the brew to push it down if you just can't resist!! The effect of leaving it as is is that your baby will likely be thicker on one side than the other as the side out of the brew will not continue to thicken...but that's ok, too. It does not affect the baby's ability to make a good brew in its turn! When I've pushed them down in the past (couldn't resist..LOL) the side that was up has tended to sink...then another thin layer of baby would start growing on the surface! The only times I've been able to produce a " perfect " baby is when allowing finished KT to sit quietly by itself in a corner and ignore it completey for two or three weeks! Hope this helps a bit!
