premature decanting?

Hi,

I am new to the group and just bottled my first brew. I became impatient after

14 days and

thought it must be ready, though it didn't taste particularly tart.

Now I am convinced I bottled it before it was ready, as I have tasted it post

second ferment

and it still tastes like sweet tea, with a bit of ginger.

I have since transferred the scoby to a new batch and have several days yet

before I hit seven.

My question is this: Is there any reason that my next brew won't work if I

started on a scoby

that hadn't fully fermented the first batch? I'm wondering if I should scrap my

2nd brew and

start over with the 2nd bit of starter left.
