I love my KT to taste rich, dark, mellow, slightly sweet, but with a nice zing or fizz. I find that occasionally with good quality puer-erhs, blacks, oolongs. I add things in the second fermentation to get some different flavors in different bottles, just so things won't get boring. I love the gingerale taste too, but not in my KT. That taste I get best with my fairly new GingerBeerPlant which I am learning to brew, without the beer taste or too much carbonation and not so sweet. Before I got this culture, I made a quite delicious gingerale drink with my converted Milk Kefir Grains and for a short period with my Water Kefir Grains (before I destroyed them by using with wild grape juice). In the end, you will find the process of experimentation fun and exciting, and your own taste will slowly develop and begin to change. At least that has been my experience.
