It doesn't seem to matter what I do, I always get wonderful kombucha. I say freeze the elderberries for use in the winter OR dehydrate them. Guest guest Posted August 30, 2007 Report Share Posted August 30, 2007 Hi, A few of days ago I decided to try a second ferment, using fresh elberberries. I added a bunch (stem and all) to a two quart jar of 5 day old KT. The taste is outstanding. I did not expect it to be so delicious. My questions for those who regularly make elderberry KT are: Do I leave the elderberries in the jar until the KT is consumed? Will I get the same results if I freeze elderberries on the stem and use them throughout the year? If not, I guess that I will have to make KT like crazy, add the fresh elderberries, and store in the refrigerator. Thanks in advance for your opinions.
