It's on it's 5th day, and beside some bubbles and brown spot growing on the top, there is NO scoby in 3 out of the 4 quart jars. In one jar the mother grew a cluster of small white spots on her. One jar is doing fine with a scoby on the top, that's the jar that had the smallest mother - thiner that a paper! Go figure. This is the jar that I put a different starter in. unfortunately, I did use cheesecloth to cover the glass brewing jars. Now I know better;-(( I did not see any flies in the jars at any time. How do I know if my fermentation is safe? Or is it contaminated? What about the K-tea this mother produced? Is the K-tea safe? What about the jar with the scoby growing in the 4th jar?
