Well, I may be totally off, but I have all my SCOBYs in one container

with KT it in with the exception of the ones I have in the 2 1/2 gal

container that is constantly chugging away, and the " backup " 1 gal

container I alternate with the 2 1/2 gal container.

I put a sticky note with the date I started brewing the 1 gal and when

I " refresh " the 2 1/2 gal. Other than that, I have no idea what came

from where. Is that a problem? I'm sure not. I basically go by taste.

Maybe when I get some extra time and gumption, I'll keep more detailed

records and compare some different strains I may get from others down

the road.
