Guest guest Posted August 16, 2007 Report Share Posted August 16, 2007 Hi EveryOne, You will find many references to a SCOBY Hotel and you may be wondering what that means and how to create one of your own. SCOBY= Symbiotic Colony of Bacteria and Yeast SCOBY Hotel is the name given to the jar that holds the extra Kombucha Colonies that you will inevitably have on hand. Each time you start a new batch of Kombucha you will be blessed with an additional Kombucha Colony. You can use several Kombucha Colonies per jar of fermenting Kombucha, most of us do, it adds flavor and perhaps keeps the carbonation in for more fizz in your Kombucha tea. Eventually however, you will have too many Kombucha Colonies to use in your brewing jar, more than you can give away to friends and family, more than you can give to you animals,...so you start a SCOBY Hotel. Get a large jar ( a two gallon glass cookie jar works well they are available from Anchor Hocking) put some finished Kombucha tea and your extra SCOBYs in there and enough tea, sugar, water to keep them covered with fluid at all times. Cover with a cloth and put it on a counter or somewhere else at room temperature. Pour some finished KT on top of the Kombucha Colony to protect it from molds. That is your SCOBY Hotel. When you share Kombucha it is a good idea to take the Kombucha Colony and starter KT you send with the Kombucha Colony from the SCOBY Hotel....it will taste like vinegar, But you are not going to drink it, someone is going to use it to start a new Kombucha fermentation process and continue the process that has been going on around the world for hundreds of years. Guest guest Posted August 17, 2007 Report Share Posted August 17, 2007 The best thing to do is to leave the SCOBYs in a jar with previoulsy brewed Kombucha Tea. Cover the jar with a towel paper or whatever you use to cover your brewing container and leave them alone.. from time to time, add some KT or straight tea (people here recommend not to add any sugar) to replace liquid lost by evaporation.. The SCOBYs will strive in that environment and stay active for months maybe years... An additional bonus is that this liquid, Kombucha Vinegar is great for starter Tea... I have read that they tend to be slow restarting after being in the fridge. It is perfectly safe to keep them in a jar covered with KT which will become quite acidic over time and make excellent starter for future brews. Just cover the container as you would a brew. Re: scoby hotel A hotel is nothing more than a storage container for your extra scobys- its a holding tank, you put enough finished KT preferably the ones that got too far into the vinegar and make sure enough liquid stays in the container to prevent dehydration. You may lid the top of cover as you would your brew- either way works and I do both ( have several " hotels " ) I find no difference in the effectiveness of the scoby due to method of storage.
