I must confess you have been one of the great sources of encouragement, and

information as we would encounter some brewing problems from time to time. Some

of you who regularly contribute....Bev of course who provides us this wonderful

website and opportunity to

share..........Zoe..............MArge....................Frantz............\

...Sandee...............Lois........and many more of you " Seasoned Brewers " as

well as you newbies have just really given us a lot of information and help (not

to mention humor and entertainment)........Thank all of you I read this list

everyday and have printed off much of your advice as I am horrible about

prowling thru archives.

Hi

I feel honored to be mentioned in the same breath as these truly seasoned

brewers.. I am a relative newbie in KT brewing. I am however enthusiastic about

it and find the taste almost addictive... Such a tasty beverage has no right to

be so healthy... I must encourage everyone here to explore the wonderful world

of fermented foods.. their health benefits are real and they are for the most

part very easy to prepare. I recently got into Kimchi and so far the results

have been great and it is sooo easy.. Next is Kefir although I am presently on a

dairy-free diet...

Do I misremember, or was it a different group? I think I read recently of

some-one who lost their milk-intolerance after using Kefir. Did not apply to me

so I didn't take a lot of notice. Maybe they started with water kefir.

Any-one recall?

Hey Frantz,

I've been making and drink kefir made with raw goat

milk for a while now. Not as long as I've been

drinking KT. But from what I've discovered you might

be able to drink kefir even though you are allergic to

dairy products. I have a friend who has allergies to

dairy and I'm going to use some of my kefir grains to

try making coconut milk kefir. That might be

something you'd want to try.

oftentimes people who are lactose intolerant can drink raw milk.

this is mainly because of the way the lactose has been changed in

processed milk, it is absorbed much faster (too fast!) in our bodies

but with raw milk it is a slower process and doesn't shock our

systems.

might be worth a try if you have a source for raw milk in your area.
