Guest guest Posted September 17, 2007 Report Share Posted September 17, 2007 Hello all; I am currently brewing my first batch of kombucha tea and have noticed that the baby is not growing evenly at the top of the liquid. It has been brewing at a good temperature for a week now, but instead of forming an even layer, as I have come to expect from pictures, the baby is mottled patches sitting on top of the mother. I know that the tea still has a good bit of time to go (after testing it for the first time today) as it is still too sweet, but I was hoping someone could tell me if things are going according to plan. I can assure you that your scoby as you describe it is quite normal. Just love your mottled, uneven 'baby'! Your expectation of a 'perfect' baby are as unrealistic as the perfect, gleaming kitchens you can see on cleaning product adverts on the telly, or as our faces and figures ;-) Wait a few more days and try your brew again (don't worry about the baby). Once you are ready to make a second brew, just add both mother and baby plus starter from the top of the brew (will help the formation of a good looking baby maybe) and brew on until you like the taste of your KT. http://www.geocities.com/kombucha_balance/ You are doing just fine! I was just looking through the photos section and noticed a syphon system. What do you think is the best way to make the KT? I've got some of those snotty, hangy things going on in mine and thought if I syphon I won't be able to pick those bits out. I've almost finished my first batch and have two new babies on the way, one 7 today and the other coming up to 6 days old. : -) They are both looking great, one has the mother pushing up for air while the other is being nicely supported all over. My first brew was quite sweet, very nice, but I was hoping for a bit more fizz. I took the first brew out at 7 days because I didn't want the brew too acidic. But when I tasted the back up jar I liked it much more, it was fizzy and not so sweet. I'd used the same tea but it was in a much smaller jar with more mother and possibly more starter tea, oh the lid was on that one. I can't remember of the top of my head how much sugar I put it, I've just started brewing ginger beer too so I'm getting the sugar confused, I think I read 70 to 100 grams of sugar per litre I used 100. I will reduce the sugar to the 70 next time. Anyway I really don't know what I'm doing. lol. Thanks for any help. Ingredients The Kombucha culture (the ferment) Approximately 70 - 100 g of refined white sugar per litre of water 2 teaspoons black or green tea per litre of water " Few, after a bit of converting and some of what I thought I knew about cups being shattered I got the recipe you linked to suggesting between 100 and 133g of sugar per litre of water. I'm sure you're right. I've made the present batches as per the first recipe above so I'll ferment them a bit longer than the first and see how I go.
