I started my Very First Batch with GT Dave's Original on 7/23/07 with green tea. I started a second batch with Margaret's Scoby that she sent me on 8/13 and I almost brewed it too long. Tasted it on Thursday it still needed work, did nto taste Friday, but when I tasted this AM I knew i had no time to spare. I ladled it out in to various mason jars, recylced GT Dave's bottles. I placed paper towels between the tops and the containers. Even the GT Dave's bottles because someone here said never to allow the brew to touch metal. However i note that GT Dave's lids are metal. What do i do next? I mean with the stuff I have just harvested? Right now it is sitting on the kitchen counter taking up space I can't afford to give it what with living in CA where I believe there is a state mandate that kitchens in rental properties must be too small tgo be useful. My mothers are each sitting on their own plate covered with another plate as i wait for the teas to cool down. I might change out that bit of paper towel between the caps and the brew for a square of plastic perhaps. Before I got plastic caps for my GT's bottles I cut squares from ziplock bags to put under the caps. Although GT's caps are, indeed, metal, the original coating protects the original brew from the metal. At this point you can leave them out until you drink them, or leave them out a few days for a second ferment then refrigerate, or refrigerate. Many people " burp " bottles regularly if they are planning on leaving them at room temps in order to diminish the possibility of a bottle exploding. If I leave mine out I make sure they are in a plastic tub with a cover to minimise any mess should an explosion occur! Good luck and let us know how it is all tasting to you! Keep some of the finished Kombucha tea....at least enough to equal 10% of each brewing container for your next batches of Kombucha tea. Put at least one bottle of finished KT way in the back of your refrigerator to take out for a special occasion a month or two from now....it will be like Champagne if it is sealed tightly....then enjoy the rest. Start slowly and drink lots of water. Little by little you can increase the amount you are drinking if you feel that you want to do so. Share with friends...start a SCOBY Hotel. Enjoy! That would be SAD :-(. What you have to do now is just repeat the process that you used to make the kombucha in the first place. If you were rewarded with a baby SCOBY then put it and some KT in a jar with a piece of cloth over it in an out of the way place so that if something happens to your current SCOBY you will have a back up. You only really have to keep the bottles in room temp for about 24-48 hours. After that you can put them in the refrigerator out of the way. Or, they can stay at room temperature in a closet, etc. Just make sure they are in a container that is waterproof and covered, just in case a bottle explodes!
