The reference to `silvery' hairs is to the specific type of

white tea. I am glad they tested at least 4 types. I interested in what

the 4 types tested differently at. White teas have a wide range of taste

differences as well as caffeine levels.

San Chemical Services, (where Roussin did his kombucha

testing) analysis Our `silvery' hairs' [silver Needle White

Tea Kombucha] and it tested three times the amount of gluconic acid

typically found in kombucha. They also tested another silver needle

kombucha mushroom tea that had been fermented with oak chips. It too,

had higher marks than the typical kombucha ferment but not as great as

the silver needle white tea.

I would like to see if more people use white tea (silver needle) and

still have the wonderful effectgs as their regular kombucha

Maybe have a poll of the type of tea people use in their kombucha

<snipped>> …... White tea also contains a higher proportion of buds,

which are

covered with fine 'silvery' hairs that impart ….

… Researchers at the LPI tested four types of white tea …

…. many of the expected polyphenols, some of which were present at

higher

concentrations than in green tea brewed under the same conditions.

Other

constituents, such as caffeine, also were present at higher levels in

white

tea. …<snipped>

I didn't even know there was such a thing as " white tea. " If I wanted to

try a brew using white tea, do I just look for " white tea " ? Is Silver

Needle White Tea a type of tea or a brand? I would definitely try brewing

with this type of tea if I knew more about it.

TIA

I love to use Celestial Seasonings Organic Vanilla Apple White for my KT. I’

m not sure if it is the Silver White Needle one you are talking about, but

we love the taste. It’s even better after the second fermentation, so mild

and smooth and it seems to be just as my black tea KT does in the body.

I also like the Numi Organic Tropical White. It is very fruity and has the

white tea in it. We have found red, white or black teas to be our favorites,

because the green tea seems to develop an alcohol-type sensation or feeling

when we drink it. It seems as if it has like, 1% alcohol in it. Hard to

explain. :-) I haven’t had that reaction with black or white tea or even

herbal teas.

Uncle Lee's Organic White tea (Bai Mu Dan)with natural Lemongrass and

Jasmin Flavor is very pleasant. I mix it half and half with green tea

for making kombucha, it produces a very delightful flavor.
