Unfortunately, this one last time, I had to use powderes sugar and have rued it ever since. I can't stand that little aftertaste. If my son wer already home, It wouldn't have lasted so long. O. Woe.. Some day I may try organic sugar and salt. I haven't put any salt in mine yet, because it makes me hold fluid. Perhaps Celltic Sea Salt and Himalayln Sea Salt won't do that. LOve. MArge. I want to say, " Thank you " for the few of you who have to field all of our questions. I truly appreciate the fact that you take the time to help us! Why would you add salt to KT? From all I read unprocessed salt will not cause you to retain water. I am up to 3g's a day of salt (himalayan) and am not having any problems. There are those in our Lyme Strategies group take 12-18g's without problems. I am discouraged about my brew, but if this round turns out well, since I made 2 I will try my turbinado sugar in one and see how it goes. I've used nothing but Certified Organic Sugar since 1994 to make my Kombucha and it always comes out fizzy and fantastic....for the past few years since it became available I also make sure that the sugar and the teas I use are not only Organic, but also Fair Traded. That means that the people who grow and process the crops are given a fair wage. A difference of a few dollars for us can mean the difference between a life and starvation for a whole family, in many of the tea and sugar producing areas of the world. Didn't know whether I should trust the claim. I never heard of the Fair Trade. I think it's a good idea to support them, that is why I pay a bit more for things from my local health food store than buying from the reg. grocers. I buy it from my local health food store. Once I got a different brand and it did not work as well so I stick to the Wholesome brand. The sugar i use is light blonde in color. I have tried using darker sugars and didn't like the taste...since I make a lot of Kombucha for the Kombucha Manna Drops I make from the Kombucha Colonies, plus KT for drinking, I buy the Wholesome Organic sugar in bulk 25 pound bags.. If tea or sugar is fair traded it has a label that says so on the package.
