Inspired by a recent post on Cheeseslave on cultured ice cream, I opted to use cream that I cultured with kefir grains as the base, and it was dreamy. 2 cups cultured cream (I cultured cream with kefir grains for 24 hrs) 2 cups fresh milk ½ cup maple syrup ½ cup raw honey 8 pastured egg yolks (whipped separately to begin with, to make more scoopable) 2 tsp vanilla Cinnamon (several good shakes) Nutmeg (a small amount, freshly grated is ideal) tiny pinch sea salt 1 Tbs coconut sugar (test for sweetness, may not be needed) To one batch we added 1 frozen banana, chopped, and dehydrated strawberry bits, chopped (can be rehydrated a little in milk, or not). In third batch we added some frozen blueberries as well. You can also experiment with milk kefir in place of milk. With pastured eggs and cultured dairy, this is a bona fide health food! Guaranteed to put a smile on everyone's face! Thanks to everyone who helped with input, inspiration and equipment loans.
