Guest guest Posted May 21, 2011 Report Share Posted May 21, 2011 In a quart glass container, mix together: 31/2 cups water (well water is best but filtered or tap water that has had chlorine removed works also) 1/4 cup organic cane sugar or brown sugar (not GMO sugar beet sugar; it will kill the grains) 1 tsp sorghum or molasses Once mixed together, add: 3 Tablespoons water kefir grains 1 dried organic fig (optional) 1 quarter organic lemon wedge (optional) Cover with paper towel/rubber band or loose fitting plastic lid and place in cupboard. Leave for 24-3 hours (depending on temperature) and strain through plastic sieve to separate grains from liquid. Repeat cycle. Once the grains are strained out, additional flavorings can be added to the kefir liquid for secondary fermentation. My favorite are vanilla, ginger, and berries (but it is good without the additions too.) Leave on counter for additional 36 hours then refrigerate- careful when removing cap as gasses can build up.
