Help!!! w/ cultured Ginger Carrots

I just made the cultured Ginger Carrots in Nourishing Traditions for

the first time. The liquid does not stay covered over the carrots as

they seem to float up to the top. When we do our annual 5 generations

pounding 200 lbs of saurkraut we cover the top with cabbage leaves and

weigh them down. Do I need to do that with the carrots or will they be

fine as they aren't out for that long. (3 days instead of a couple

weeks.) I used the 3T of salt per 4 cups of carrots per the recipe.

who would like to culture something other than beverages (kefir,

kombucha, beet kvass, " Indian Punch " , etc.)
