Guest guest
The beef I get is never mushy. My butcher told me if the animal is stressed, the meat gets a bad taste. He operates a small town, third generation shop. He's not a hired hand, his grandpa and father taught him. He doesn't have a feedlot. It's a small business and animals don't have to wait. The farmer brings in the animal, they unload from the truck and the animal is quickly and humanely put down without stress. One year my steer started to stress getting off the small truck. Farmer told me he was content in pasture and loaded well. Getting off a truck was something he hadn't done before. Rather than stress him more, they put him down right on the truck. I like animals, so really appreciate that it's done this way. I give a prayer that it goes easy before, and afterwards a prayer of thanks for the animal who sacrificed his life to sustain my family. The huge processing plants can't possibly care about each individual animal. That's why I like my small town butcher. Kathy
