We run a raw kitchen in Chaska and we don't heat over 118 degrees. The main

reason for this is seeds and grains after heating to 118 will still sprout

and grow. However, in our experimentation, after heating to 120 we couldn't

get any growth or sprouting at all. In my experience, raw enzymes maintain

life at 118 and under.

I don't however have specific knowledge of honey processing or heating. ;0)
