Hello Reggie, I want to become a vegan mainly for health reasons, and partly for environmental/ethical reasons. It's been a slow process to get to this point, but I finally feel like I am ready to take that step to becoming a vegan. Probably the most difficult thing for me to give up will be cheese! I'm pretty fussy when it comes to " replacement foods, " and I have not had much luck finding veggie cheese that is palatable. Any suggestions? Or do I just need to do without? My other challenge will be my husband, who thinks I've gone to the " dark side " just by being a vegetarian, let alone becoming a vegan! So if anyone else lives with a carnivore and they have suggestions of how to make mealtimes/going out to eat enjoyable for both of us, I would welcome the ideas. I currently make 2 different main entrees for the two of us but we share the same side dishes at meals.
