Oh, , it's great that you are now selling NHS Japanese knives!  When I

first began macro by reading " The Cure is in the Kitchen " , I looked high &

low for Sherry's " macro knife " .  It took me a while to realize what she was

meaning & even longer to find someone who carried the NHS knives  :-) 

 

By now, that knife has chopped thousands of onions - and with a daily

honing, it will do thousands more.  I've also heard good reports about the

newer, ceramic knives. Do you carry them too?

Just added the full line of NHS Japanese Knives which are highly regarded in

terms of macrobiotic cooking. I use one of these myself.
