Add potatoes, carrots, and celery. Add green beans. Blanch, peel and chop tomatoes. Add to soup. In a bowl, mix tomato paste with 1 cup of hot soup stock from pot until smooth. Add all back to pot and stir. Add cabbage. In a wok or skillet, brown onions and green peppers lightly, then add to pot. Cook until cabbage is tender- about 5 minutes. Turn off heat. Add parsley, dill pickles and herbs. Salt and pepper to taste. Fish soup is cooked in all regions of Romania ( Transylvania, Oltenis, Moldova, Muntenia etc., and especially in Dobrogea where the Danube's Delta provides plenty of fish. Some 350 people took part in the quest to become the best fish soup chef in the Balkans. The town of Sombor, Serbia played host this year. Traditionally, fish soup is prepared in small kettles on open fire by fishermen. The recipe includes a lot of chopped onion, hot ground chili peppers, spices such as black pepper, white wine and tomato juice. And of course, fish. But the challenge is in the ratios and timing of each individual chef. The number of competitors at the fish soup festival is growing annually officials expected that around 3,500 people would taste the soup this year. Visitors are offered to taste the soup for free.
