That is why we are here:-)) Whether or not to use plastics with Kombucha is a matter of personal choice. There is a file in the FILES section of the list Homepage about Plastics and how they are endocrine disruptors and they are made from petroleum products so I personally recommend using only glass for fermenting and bottling KT. When I used to sell Kombucha Manna Tea in the local health food stores where I live, I called all the plastic bottle manufacturers to ask if they would guarantee that Kombucha, being acidic, would not leach from their plastic bottles....none of them could assure me that the plastic would not leach into the Kombucha. There are special laboratory bottles made of plastic that are used to hold acid but they are very expensive and not made out of the plastic that is usually available. Acidic beverages though now available in plastic were the last to be switched from plastic to glass. Maybe that means they have found a plastic that will not be effected by acid foods or maybe it is just for convenience. Plastic is a lot easier to transport than glass! Guest guest Posted July 26, 2007 Report Share Posted July 26, 2007 I have been using Ed's (Happy Herbalist) five-gallon plastic container for our continuous brew for seven months. Both of us are incredibly healthy, and the tea is delicious. Not only are we healthy, we are getting healthier and healthier. I bought my first SCOBY from Ed, and I have not bought or been given a SCOBY from anyone else, so all of our SCOBYs and all the ones I have given to others and all the ones I finally tossed because I was running out of barns, come from that first very healthy very prolific SCOBY that is now about a year old. Therefore, I trust Ed's products and I trust him. However, I bottle the tea to glass, and I do use EZ-Cap bottles. I do a four to five day secondary brew, and then put the bottles in a fridge that is not often opened. And my current continuous brew is working so well that now, after having to make do with store bought for a week, I had to go out and buy more bottles to contain what I am drawing off every three days. The only time I had a problem was with the SCOBYs that were in the hibiscus continuous brew: they stopped, leaving me with a sweet weak tea that never went anywhere. The SCOBYs in the barn at that time were still active, and my new continuous brew is perking along, and I have bottled twice from it in eight days (I pull off two gallons at a time. I will say, however, that all the rich pink tea never affected the color of the continuous brew container: it remained sparkling white. I have read yays and nays on plastic, both with data to back them up. Therefore, I decided that Ed, with all his experience and his research, would not sell something that he considered dangerous to as many people as buy from him. Yes, I agree with Joyce! Although, these days I brew mainly in glass I also use gallon buckets of the same plastic that Ed sells. My buckets have been going for a very long time with never a problem or deterioration on the inside surface. Provided your plastic is #1 PET or PETE like in soft drinks bottles, or #2 HDPE (high density polyethylene) like my buckets, there should be no problems.
