I get my pu-erh from Republic of Tea (which is also a fair-trade organic supplier). Thanks - Peggy <milo.open@...> wrote: hey everyone. thanks for all those who helped me out with my new dad anxieties. the advice to just leave the brew alone resulted in much thicker/sturdier scobies the second time around. my third brew is now in the makings and i'm starting to enjoy the second. for the second brew i divided the scoby in half and made one w/ shincha [first flush green tea] from shizuoka japan and the other with organic pu-erh maiden from rishi (http://www.rishi-tea.com/store/product.php?productid=5059 & cat=6 & page=1). i highly recommend rishi's fair-trade organic wares. as most of you probably know, you usually can't trust chinese tea that says it's " organic " , but rishi has direct and longstanding relationships w/ its growers in china whom rishi visits periodically so if anyone does have organic chinese tea it's probably them. anyway, i want to recommend using 6-8 teaspoons of pu-erh maiden w/ not a lot of sugar (maybe 1 cup or less) per gallon. i let it brew for about 10 days and then bottled it with two teaspoons of ginger slivers. be careful because it will get very, very fizzy. it puffed out the metal led of the ball jars i was using. but it was really envigorating, mildly spicy and fresh, fizzy, sweet, tart, etc. the best of everything i like in kombucha. the scobies really love this pu-erh maiden stuff. the shincha+ginger was really good too but the flavor was not as complex as the pu-erh maiden. the third brew is one jar of pu-erh maiden and one jar of shincha/organic yunnan black (also from rishi). i'll let you know. cheers, chris --------------------------------- Boardwalk for $500?
