The sad part is there is nothing on this side of town. Sorry. Intro & questions Hi,I'm and I live in Texas. My son Max is 6 and we stronglysuspect he has high functioning autism/asperger' s disorder. He has anappointment w/ a developmental pediatrician in June. My husband and I are looking to move to GA in coming months so I needto ask some questions. Specifically, we'll be moving into or nearville, off of Hwy 20 (route 20? not sure, I just know it's 20lol). I just wondered if there was anything in the outlying areas because that would be more convenient than having to drive in the city. But we live in San , so city driving wouldn't be terribly awful for us. As for schools, Max is mainstreamed, so we'd like to continue that. I just want to make sure he gets in a good school out there. His current one is just wonderful and his teacher is a beautful person, so helpful, so willing to go the extra mile, the entire school staff is like that and I love it! His kindergarten (a different town an hour away) was just plain awful and in my opinion the principal and his teacher should not have the privilege of working with children. (You don't make a child stand outside the office on paper after a bathroom accident like he's a dog! Completely unacceptable!) In the meantime, I'd like to experiment using the GT Dave's product. I have 2 bottles of his original formula (nothing added) and have heard you can perhaps start a scoby from it. Not sure if this is accurate info or not. If it is, could anyone possibly enlighten me to the proper proportions? I've never made any type of Kombucha tea before, so instructions befitting an extreme newbie would be greatly appreciated. I know to use good quality green/ black/white (or blend of) teas, and I have organic sugar. I'm just not sure how much of everything I should use (water/tea/GT Dave's/vinegar??). Yes, , you can indeed. Believe it or not, I have never had a shop-bought KT before, as they are not so widely available here in the UK. There have been many mentions on this list, though, about people successfully developing the bottle culture into a homebrew. The problem you may encounter is a lack of yeasts, as the bottles of commercial raw Kombucha are very bacteria biased and fermented very long. During this process many of the yeasts go dormant and need stimulating again with a good amount of sugar and tea nutrients. My advice: Make up a smallish amount of sweet tea (2 quarts maybe) from a generous 3/4 cup sugar 4 teasp. of proper tea of your choice (you could use more) 2 quarts of water just off the boil. Brew tea first for up to 10 mins or less, strain and dissolve the sugar while the liquid is still hot. You need only a small amount of hot water for this. Strain the tea and repeatedly mix more cold filtered water in as you pour it into your fermenting (glass) container. Make sure that the liquid is cool and then pour your store bought KT on top, the more the better. Cover and place in undisturbed place. Allow at least 2 weeks to ferment and then have a look and taste and take it from there. One of the exciting things about Kombucha is the experimenting. Hope you have fun with yours.
