When my KT has finished brewing in its 8 liter glass jar, I pour it

through a nylon filter bag and into stainless bowls, each more than 2

liter capacity. From there I use a liter glass measuring cup and a

plastic funnel to fill 500 ml glass beer bottles. All of the above

are sterilized with 95 degree C water.

When all of the bottles are filled, usually 25 or so, I use a bottle

capper with plain metal caps, coated with plastic on the inside. I

label each cap with the date of bottling and any other distinguishing

information. Since I brew a normal 8 liters of green tea with sugar,

as well as 8 liters of green tea and rooibos with sugar and agave, I

need to distinguish the caps. I refrigerate all of the bottles

immediately with no secondary fermentation. Brewing takes about 15

days to use up most of the sugar.

My wife, Pat, and I each drink about 12 ounces a day. Good energy

booster.
