I just read here on the board that if I wanted it more vinegary (versus more sweet) and wanted more carbonation, to let it brew longer. I put all my scobys in one jar, my Scoby Hotel. I don't separate the baby from the momma, but keep them together. Okay, I will be totally honest, this is mostly because I have not quite gotten past the " ewww....it's too icky to touch " stage yet.
