Hi Guy, Floods? Where? Plenty of wet stuff from the sky, but nothing extreme where we live. Cold, mind you! I expect it will slow down my Kombucha batches a bit! > I'm just getting ready to bottle my first batch of KT and am after > suggestions on how to best wash the bottles I'll use so I get maximum > benefits from the kombucha. What kind of bottles do you use? I use mainly glass bottles (Sloer, wine, groelsch). I prefer the screw top type and the swing top, but the latter are not so easily available. If a bottle is very dirty and has been hanging around for a while and contains slimy-smelly remnants I first rinse it out with hot water and then fill it with a light bleach solution for a few hours. After that I rinse it out several times VERY thoroughly. Most of the time bottles get recycled straight from having had the original beverage in it. Then I just wash them out with very hot water - NO suds - wash the top as well and close immediately while still hot. Bleach bath won't be necessary then. Such a bottle is then ready anytime for the KT. > Also, I've got a bit of an acid stomach so > would it be best to leave it a few days longer or drink it sooner? I should probably drink it sooner rather than later as it tends to get more acidic during secondary fermentation. It would probably be helpful to avoid drinking the KT on an empty stomach but to have it as part of a meal. My husband used to have acid reflux, and the Kombucha actually helped it get a lot better. Depending on how acidic your brew is, it might also be an idea to take the KT with water or fizzy mineral water as it would substantially dilute the acidity. Happy bottling and drinking.
