Guest guest Posted June 11, 2007 Report Share Posted June 11, 2007 Hi Molly, You can use fruit tea blended with green tea (which is a black tea), I've just brewed some fantastic stuff with 2 'Blackberry Burst' tea bags and 3 Green tea bags, a beautiful cerise scoby, and what a drink! It was still quite sweet and very fizzy. The stoppers did fly out after the first night after bottling - so 'burping' is important, I think it's the warmer weather in the UK. Have you tried to see if there's anyone near to you who would send you a scoby for postage costs? There's also a link to a scoby exchange in s last post on the list, folks you can email to get one. You MUST use green or black tea, definitely NOT Earl Grey. You can use some herbal teas WITH the green or black tea. I know hibiscus and nettle are okay, but I don't know what other herbal teas are okay. I have read that some herbal teas can end up killing or weakening the Kombucha after a few brews. I'm interested in reading from the others about what teas are okay and which aren't. I call my scobies boochies. Many of the others in this group have all kinds of names for theirs. Guest guest Posted June 11, 2007 Report Share Posted June 11, 2007 Hi Molly, I think a lot of folk on the list tend to experiment a bit after the first few standard (normal tea) brews, then have a go with the anarchist tea (all properTEA is theft! LOL)! Beware this strange brew can give you a bad sense of humour and your friends may regard you suspiciously when they see jars with strange stuff floating on the top! Seriously, once you've got a few reserves, so to speak, you can try different blends, so if it goes wrong you still have the reserve scoby and starter tea to keep you going. Some people even brew coffee kombucha, I believe! I don't think we've got a proper recipies page on this group - but there have been many suggestions even recently, like the hibiscus blend, and I like green tea and ginger. And someone also suggested a green tea Earl Grey that they've been using.( Is it because it may weaken the scoby?) Isn't it funny how we can have different experiences with brewing! Hibiscus and gunpowder green tea are feeding them well for me these days. I was suprized to see 1/2 inch of new pink growth on my babie scoobies. And I must say that the smell is wonderful. I named my scooby and the kt. I just call it scooby dew. Especialy when i add ginger to an after fermentation. You know like Mountain Dew? Someone on the list said that I should always mix rooibus with some black tea to ensure a happy SCOBY. I was new, and I don't know if that has made a difference, but I went ahead and made my tea half rooibus and half black oolong tea. Then, keeping a base of 1/3 rooibus and 1/3 black oolong, I experimented with different herbal teas for flavor: I tried a ginger tea once and then learned that any herbals made with herbs that are anti-bacterial could weaken, over time, the SCOBY. That made sense, so I started to consider that in choosing herbal flavors. For quite a long time, I used blueberry tea, jasmine blossoms, rooibus and black oolong, and it was very good. Then one day, I tried a pomegranate/green tea for a third of the mix. Excellent flavor and a pinkish color. Next came hibiscus, and I liked that so much with the rooibus and black oolong that I have stayed with that and dropped the jasmine blossoms. I tried a batch of green tea and hibiscus, but it didn't have the depth of flavor that I get with the rooibus and black oolong and hibiscus. So I have returned to my original base, but I continue to use the hibiscus blossoms. Most of my SCOBYs have a pink tinge; some are very pink, and I do store them all together because of space considerations.
