Hi Rochelle

I regularly ferment Rooibos. You must add some real tea. I've used

black, green, oolong

and white teas. I use 2 parts Rooibos to 1 part " real tea " . You

might want to try using a decaffeinated black tea with the Rooibos.

I am by no means an expert, and asked a similar question a while

back, but never got an answer, so I could be wrong. But, I have been

brewing for a while now (maybe better than a month??) and have 6

healthy, happy SCOBYs, from the mother to new ones brewing on each

decant. I get new ones every week. I use only decaf tea. I didn't

even think of it until after I had been brewing for a couple of

weeks, it's just normal for us to have decaf tea here. Since my

SCOBYs seem happy, and grow vigorously, I do think decaf isn't

hurting them, at least not yet. I may consider making a resting brew

of caffinated for storing and starter, just to keep some super

strong, just in case. But, my holding jar currently has two big

SCOBYs and a baby in there now, and seem to be doing really well.
