I was actualy just going to post a topic about that might relate to this, but I thought people would think I was nit picking. I was going to gather peoples opinions on if it is better to use rubber bands, or cloth to fasten the cloth cover to the top of your brewing container. I personaly do not use ruberbands. It just seems like it will leave spaces for critters to crawl in. So I use anything from old shoe laces to long torn off peices of cloth. And when tieing it off, instead of looping it arownd only once like the first step in tieing a shoe, I loop it arownd twice, pull and it stays tight. Great place for extra cultures also. It makes the soil alive again. FRUIT FLIES - ug! Okay, I had ONE JAR left from my May 1st (1 month!) brew. The rest were more recent.... And so I was excited, took off the linen cover, and FRUIT FLIES flew out. Needless to say, all of it was trashed. I think the cloth top got wet at some point, but none of my other batches had this problem. What gives? Same house, same everything, right next to each other. I raise worms and have a site at mikes worms dot com. I could add that information to the page once I tried it for myself ( once I get brewing again). As a side note I have a 5 gallon crock that I am useing right now to make terragon vinegar. It will be in the vat for 2 months. My question is can I use that vat for brewing or would the vinegar residue interfer with the brewing process,perhaps change the taste? Thanks for all your help. J.
