I decided to keep it and put it in a separate container for a later brew. My questions are: 1) It's so much smaller than the mother - does that make any difference and 2) how long can I keep it sitting in a plastic bottle? It has about 2 cups of sweetened tea in there with it. Is room temperature okay or should I put it in the refrigerator until I'm ready to use it? You should not keep the culture in a plastic bottle. Considering the acidic nature of KT glass is safest. It would have been better for the scoby to have been kept in KT rather than sweetened tea, but it should probably not matter too much. > Is room temperature okay or should I put it in the refrigerator > until I'm ready to use it? Never put a Kombucha culture you are intending to brew with at a future date in the fridge!! Like any worthwhile craft there are new things to be learnt all the time. I have been brewing for over 20 years and am still refining and experimenting and getting to understand Kombucha and its wonderful ways, I guess to the end of my earthly days.
