I have been brewing HibiKombu for a few weeks now and it has conquered

our tastebuds by storm. Only one problem: Can't brew it fast enough!

I use the 'normal' amount of camellia sinensis (of all the different

kinds) and one tsp of Hibiscus per litre as well.

I also use slightly more sugar than I do for pure KT.

Don't worry, not all my scobys are blushing and I keep them separate from

the ordinary ones.

Now that Elderflower time has arrived here, I have also 4 buckets of

altogether 20 litres of Elderflower Kombucha brewing, last year's

favourite as far as my husband was concerned.

Will it beat the popularity of Hibiscus, that's the question ;-)

Wow! This is fascinating! I've been drinking hibiscus Kombucha for months

now and had no idea that it was so good for me. Just love the taste.

Hee Hee.... know what you mean about not being able to brew it fast enough,

That is what was happening to me. I started with just one container for the

hibiscus and those bottles ran out in just a few days. So, I decided to

brew three pots of it. The stuff is just amazing tasting.

Yep, I've never produced such thick SCOBIES before. They are so healthy and

produce so fast, I cannot keep up with them. I'm looking for homes for my

blushing SCOBIES all the time.

Of course, I don't give them to beginners... I give them the 'normal'

SCOBIES. I give the blushing ones to family and friends who are already

brewing. Unfortunately, they are all brewing hibiscus and have and are

getting an excess of SCOBIES.

Pangie, I'd be really interested in getting one of those hibiscus SCOBIES.

Right now I'm in the process of regulating the balance of yeast and bacteria in

my primary SCOBY, but I'd really like to start brewing with the hibiscus.

You're somewhere over the pond, as I see by your address. Any way you could

send a hibiscus SCOBY to Illinois in the US? For that matter, does any one else

(closer maybe) want to send me one? (I'll reimburse postage, of course.)

Pangie, can you tell me how many tbsp. hibiscus flowers and leaves to

put in a gallon of the water. I saw your recipe but I don't understand

what 6/8 hibiscus flowers leaves mean. I just bought 1/4 pound of dried

hibiscus leaves and flowers from our local natural store. They are all

different sizes. I am excited to make some new hibiscus kombucha

tonight, since my brew right now is ready to bottle. I can't wait to

make blushing scobies like you so beautifully nicknamed them. I want

them fat and thick ! How long did it take you to make them into inch

thick scobies?

Can't wait, and trying so hard to be patient with my brewing,

I would be very happy to ship it to the States, However, I fear it may not

survive the cold (in the plane's hold). Also, it will be x-rayed, which

might not be good for it either.

However, if you want to take a chance, just e-mail me at pangie777@...

However, if there is anybody living in the States who has a spare

blushing/hibiscus SCOBY for Sylvia, it might be better for the SCOBY.

Hello Idy

Yes, that was a bit misleading. When I first bought the pack of hibiscus,

some of the larger heads were on top. However, once they were gone I was

left with bits of flowers and leaves. So, now I used the following recipe:

Water: 8 Pints

Tea Green: 4 Teaspoons

Tea White: 3 Teaspoons

Herbal Tea Nettle: 2 Heaped Teaspoons

Herbal Tea Hibiscus: 3/5 Teaspoons

Sugar: 405 Grams (approx. 14oz I think)

I wouldn't worry too much about exact measures for the hibiscus. Sometimes,

I use more and sometimes less. I started very carefully with just 2

teaspoons but then became bolder and doubled up <LOL>.

Also, you don't have to use white and green tea. You can use any tea you

usually use. I sometimes use Earl Grey and other times ordinary black tea.

However, the best results have been with green and white tea. If you are

anxious to get started and don't have green tea, substitute whatever you

have in the cupboard (as long as it is real tea).

Hi Pangie --

Hmm. You are absolutely right. (I tend not to think of these things,

being so caught up in my enthusiams.) I suppose I should try this with my own

spare SCOBYs first, then if that doesn't work, go hunting a little closer to

home. Who knows, maybe this hibiscus will bring my spares back from

hibernation!
