I visited my Auntie Anni (twin sis of my late Father) in Germany, and the first thing my eyes my eyes were drawn to like by a magnet was an elegant large glass bowl in which floated the pristine disc of a pancakey substance. I instinctively realised, I was looking on a great wonder! 'Das ist Herr Pilz', Auntie said, as she introduced my to her 'Sir Mushroom'. 'Easy to make from tea and sooo healthy,' she said as she winked at me. She knew, that her brother's daughter was made of very inquisitive stuff and would not let a Kombucha opportunity pass without jumping right into the middle of it ..... I begged her for a Kombucha offspring and imported it into England when we went back from our German holiday. At that point I knew extremely little about Kombucha and had just a simple recipe of Auntie's which I have followed ever since. The Kombucha culture I have today is very multi-national as I added to it over the years one Southern Irish, one Northern Irish and the famous Bob culture I had from my friend Jo from the very northerly ish East coast. Hundreds of offspring have travelled from middle England all over the British Isles, Europe and even Finland, Russia, Turkey and Egypt.... there might be a population explosion happening! The most precious offshoot of my Kombucha dealings has been the many wonderful friends I have found, often moving from Kombucha advice to sharing personal things, also having lots of fun, and even visiting Kombucha friend in Belfast, which was an unforgettable experience. From this has sprung a dream to circum-navigate as much of Ireland as possible by bike. As my husband is now semi-retired, and we both are old pushbikers this may have come within reach of the possible soon. It'll be interesting to plan the little bottles of Kombucha in we'll want to take, at least one per day per person, quite a rashioning by our consumption standards. Interesting days ahead, as you can see. I was on detox and wanted to repopulate and re-balance my intestine flora which I knew was in disarray from previous use of antibiotics. 4 months ago, on a search for Probiotics, I found a GT Dave's Kombucha in the Probiotics section in a Whole Foods Market store and tried it, loved it.. I researched Kombucha like a madman on the Internet and found out it was so much more economical as well as healthier to brew my own... and finally found this wonderful group.. I drink at least 500 ml a day and often close to a liter. I am in good health but since I am doing several other things amongst them using exclusively Coconut Oil for cooking and the Coconut milk instead of milk, as well as using it on my skin and taking at least 3 teaspoon a day, I am also on a non-gluten , no Dairy, vegetarian diet, it is difficult to know exactly what KT has done for me, I can tell you however that my Otitis media has disappeared. The effects are the following: immediately after drinking the KT I would feel my sinus opening up and notice an improvement in my sense of smell. Moreover mucus would come out of my nose.. Now that the otitis media is gone, I do not feel these effects. I have however become extremely fond of KT in general and know its Probiotics, and helath giving benefits are real plus it is sooo good and so refreshing...I do like the taste of my brews, my favorite being the WOG ( White OOlong, Green) combination but I have a Pu-Errh brewing and while it seems to take longer it is extremely interesting tasting.. Pu-Errh has a very strong personality.. I tasted it after 7 days, it was flat, I have left it brewing, we shall see... It's such a brilliant testimony which I thoroughly enjoyed reading. WOG will be my next batches again ... you reminded me, thanks. I have so = many combinations going, my brain goes quite fuzzy-blob sometimes ;-) As to the venerable Pu-Erh :-)) I found the same thing that you stated: strong personality, dark and rich, almost molassish. Takes a lot longer to brew than my ordinary 8-day brews ... more like 2 weeks! And it does not acquire fizz until the secondary fermentation in the bottle. Yes, Pu-Erh is different.... but delectable. A question concerning the making of Pu-Erh tea: I read that it needs boiling for a while until it develops its rich red colour. I did that last time, as opposed to the previous time when I just infused it like my ordinary teas. It did not taste as good and probably wasn't as efficacious either. The boiling seems to be necessary with Pu-Erh then? What do you know about its medicinal properties? I read that it is a very good slimmer's tea and very good for the vascular system (veins and bloodvessels and all that ;-) That's it then for now......... over and out!
