" well, this past time, i must have become rather " sugar happy, " because i've been brewing for 2 weeks, and the mix still tastes a little sweet, despite the fact that i have a very healthy SCOBY in there. the vinegar smell is permeating my place, and i'm just wondering if i should leave it brewing for another week or so...? danielle Quote Link to comment Share on other sites More sharing options...

Too much sugar, when attacked by the yeasty beasties, I guess would, possibly yield an overabundance of C2H5OH (Just showing off ;-)) The point is, too much alcobooze from back in the wine brewing days can poison the yeast to death. The post I was about to make was a dire warning to those of a senile disposition, like myself. I am brewing 1/2 gallon at each brew, so you would expect to halve all the contents. MAKE SURE YOU DO. I forgot to halve my sugar for one brew, too sweet. Us Brits have a word for it copied and pasted below... pillock n. Idiot. You could almost decide having read this dictionary that any unknown British word is most likely to mean " idiot " . And you could almost be right. We have so many because different ones sound better in different sentences...etc. Nn.
