I'm sure you figured out it is safest to open them over the sink but

I did get a clue from a brewer I know. I hope I can describe it

accurately. Showing you in person would just take a second. You may

know this already anyway...

Don't open the bottle by pulling up on the curved part of the bail

(the part you push down on to seal the bottle). Instead, turn the

bottle over so the neck of the bottle doesn't have a wire across it.

Gently press on each wire " hinge " (where the wires attach to the

bottle). The pressure of the wires holding the cap on will lessen

and some air will get into the bottle. If the seal starts to foam up,

let up on the hinges so the bottle reseals itself. Sometimes the

gasket part of the cap sticks to the mouth of the bottle and you

might have to peal it back a little with your finger. That's the

trickiest part I think. Humans need more hands sometimes...

Janine,

That is a great description of how to open the groelsch type bottles. My

engineer husband showed me how to do that, and I have not had one fizz up

and out . . . yet. I do a secondary ferment for three days, and I do not

burp them. Then into the fridge. When I open them, they make quite a big

pop, and the beverage is very fizzy, but no spouting off.

Hi

I am reading all of this with amazement... I have put my brew in these E-Z Caps

bottles and left them for days .. I mean close to a week... I just open them up

and there is a pop, not a loud one mind you... I would like to have the problems

you are having.. My brews are very tasty but lack the GT Dave's KT bubliness

even after a week of secondary fermentation... I may be off-topic so I

apologize.. What is the trick to get that bubliness?.. I am far from it so far..

Did you try sticking it in the refrigerator for a bit?

I find that to be very helpful.

I think it has to do with what particular bacteria/yeast are most active in

each culture. I have one strain obtained from a friend in GA that never

makes bubbly KT...Both of the cultures that I had shipped in (one from IA

and the other from NC) both produce bubbly brews but in differring

amounts...with the one from IA being somewhere in the middle and the one

from NC producing brews that are almost too bubbly.

I find that white tea in the mix tends to make a bubblier brew for me as

well.
