Do most of you use starter tea AND vinegar together when you start your

brews. Everything I have read says use 10-20% starter OR if not

availible use the vinegar.

I had a mold problem and just want clarification when I start over.

I used vinegar on my very first brew but have used starter tea ever since.

I use both, just a few tsp of distilled vinegar. I figure that I'll

do it for the first few brews then maybe every now and then. I think

I will though do it for every other brew in the summer, even with air

conditioning, it gets hot and muggy here.

Jeff, I never use vinegar, always the starter, but if you have had a recent

mold problem suggest you cleanse everything thoroughly with vinegar and then

hydrogen peroxide ( reverse order also works) Clean your counter tops, etc

this way as well. suggested using a spray bottle of each solution

and then just wipe dry.

When creating your next brew- be sure that your starter solution gets poured

directly ON the scoby. This should prevent any future problems with mold.

When doing continuous brewing I always dunk the scoby in the previous batch

before adding the new sweet tea.

Jeff,

I use starter tea : either KT that has gone too sour from separate bottles

or very acidic KT from my starter pot.

If you do not have very acidic starter KT I would advise you to add first

your ordinary KT and last a couple of tbsp of distilled white malt vinegar

over the culture before you cover it. This will add protective acidity

and help to keep mold away.
