Thanks a bunch. That's what I'll do. I can't wait to drink this stuff

tomorrow. Just doing the little straw test for the past two days is giving

me incredible KT cravings!!

Myh favorite part is the second ferment, it gives the KT more character...

I guess I brew for the second ferment, the first part of it is bland,,, I'm

not a bland person,, so I do the second one....

I keep the original brew pure, tea and sugar only, but on the second one,, I

add some thing,,, papaya) bleek failure, Ginger good, raisens, good for the

opening effect of the brewing, taste is my best boss...

Just opened ???? , hummm, tastes like lemon,,, that is a really good one..

keeps the foam on...

Original brew is OK, but to me the aged stuff is ideal, but who am I all

taste buds run in varying directions....

Hi ,

I don't know much about teas but I can say that the secondary

ferment is not at all necessary unless you want more fizz.

I stopped doing a secondary because it got too fizzy too fast. I

love the taste straight out of the container and the bubbles are

just right so I now just pour it into my gallon fridge containers

without another ferment.

I also don't have to worry about kt explosions that way.

If you like it straight then don't worry about bottling.

I'm finding this thread interesting. I haven't done a second ferment yet.

I get the most fizz the day I decant a new brew. After that, it gets flat. I

suppose it's the storage. I use those glass refrigerator water bottles with the

flat plastic-lined glass lids. I guess it lets the fizz out :-( I also

refrigerate my Ktea.

I love the fizz so much, I'm thinking I may look into a few used Grolsch

bottles. I need to get some more fresh ginger, I know that adds fizz, and I

want to try some goji berries, too.

That is exactly what I do!

Mine tastes best that first day.

Here's another question. Does everyone else's K tea give them sort of a tingly

bite on the soft palate? Mine seems to be getting nippier as time goes on (with

the same scobies, I mean, not the tea itself).

I found out a tea I hate to brew with. I forget who all posted about flavored

teas a while back, but I tried a batch with Bigelow's White Tea and Tangerine.

YECCCH. And another nasty one was a green tea with mango and orange flavor (as

a straight tea it was nice). It took 2 more brews with plain black tea to get

that nasty flavor leached out of my scobies. At least I know I didn't wreck

them. Couldn't even drink the ktea though.

You all have me experimenting now with teas! I got some Pue-ehr a couple weeks

ago. Not wild about the flavor as straight tea, but thinking I may take a walk

on the wild side and try a brew with it and see if it tastes better as Ktea.

What happened with my secondary brews is that they actually lost

flavor and the fizz was much less tasty. It was like they lost zing to

get more bubbles. I have never been a big fizzy drink lover, tending

more to less fizzy soft drinks when I drank them.

I realized that I most enjoyed my kt when I was bottling it. I always

drank about a pint or more when bottling. Sometimes lately I have to

be hit in the head with a brick to even believe my own senses but

since I so enjoyed drinking it at the bottling process and didn't like

too much fizz I finally took away one step and liked it more.

I also added things to it at bottling time and although they were good

in their own way (ginger and peaches mainly) I still slurped and

slurped at bottling time and never enjoyed it more than then.

Sandy, that's exactly my experience as well. You should see the amount

of KT I can down whilst bottling .... a quart easily ;-)

When the brew comes out of the bottle fizzed up I usually let it sit

for several hours in a glass open to the air ( put a cover over it if

there are flies about!). The taste will be so much mellower and even

fragranced. You wouldn't think it's the same drink!

Mhhhhhh, got to have one in a min!

Ahaaaa, Frantz, that's the five million dollar question ;-)

Truth is, there are no hard and fast rules as Kombucha is not a drug,

but a food!

The advice is, if you a renew to Kombucha to start with smaller amounts,

maybe 4 fl oz 2 - 3 times a day and to build up from there until you

come to oldies like my hubby and me who drink in excess of a quart a day.

A quart/litre is also considered a therapeutic dose by many in people

with health issues like cancer, e.g.

Enjoy your Kombucha and listen to when your body says stop.

Trouble is, mine rarely does ;-)

Yeaah! It is good to hear that some, like me, are not distressed that their

brew is not fizzy.

Sandy, that's exactly my experience as well. You should see the amount

of KT I can down whilst bottling .... a quart easily ;-)
